I&#039;m glad to have you here.&lt;br/&gt;&lt;br/&gt;Marlene -- So glad you like the waffles; I&#039;m not really a big sweets eater, but they really are addictive.  I haven&#039;t experimented with gluten-free baking myself, but I think there are a ton of gluten-free blogs/recipe sites out there.  And I&#039;ve been encouraging my mom to have you all over sometime after the holidays (I&#039;ll be in town), so hopefully we can finally meet (and eat)!&lt;br/&gt;&lt;br/&gt;Julie -- DM&#039;s book is definitely a worthwhile investment (and you&#039;re right, I should post that recipe), esp. if you&#039;re a vegetarian.  Re: the muffins: they&#039;re not overpoweringly lemon-y, but you could reduce to 1/4-cup if you want.</description>

		<description>I love Deborah Madison&#039;s recipes, but i don&#039;t have her big book.  I now want to get it just for that cake (maybe you&#039;ll post the recipe some time??).  I like the vegan muffin recipe too, but I was wondering if they taste very lemony with a whole 1/2 cup of lemon juice. I like lemon, but it seemed like a lot...just curious.  It&#039;s nice to get a new healthy muffin recipe.  &lt;br/&gt;Julie</description>

I especially like preparing the batter the evening before and just adding eggs and baking soda in the morning. It&#039;s fun to just get up and start cooking! I also add nuts and cinnamon, two things I can never get enough of.&lt;br/&gt;&lt;br/&gt;I&#039;ll be experimenting with different flours in an attempt to reduce the amount of gluten in our diet. Have you tried that with any baked goods?</description>

I&#039;ve loved quinoa for years for it&#039;s texture and flavor.
